Three-Layer Vegan Strawberry Cake

Ingredients:

For the Cake:

  • 3 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups almond milk (or any other plant-based milk)
  • 1/2 cup vegetable oil
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons vanilla extract
  • 1 1/2 cups finely chopped strawberries (fresh or frozen)

For the Strawberry Frosting:

  • 1 cup vegan butter, softened
  • 4 cups powdered sugar
  • 1/4 cup strawberry puree (made by blending fresh or frozen strawberries)
  • 1 teaspoon vanilla extract

Instructions:

For the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the almond milk, vegetable oil, apple cider vinegar, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the finely chopped strawberries.
